Paul has been a culinary development chef for Bidfood for 6 years. He has 35 years of experience, working across multiple different sectors in the industry. Paul has worked closely with many different customers to understand their challenges and help develop
solutions based on their needs, an example of current project from the education sector, is a focus with customers on how to re-use their ingredients in other dishes. Food wastage is a big problem in the sector, especially with choice-based menus, and can incur a lot of wasted costs. In response to this Paul has developed the Food Waste Matrix which chefs can use to help avoid waste or over production of food by utilising common ingredients in different ways.
